Preparing for Spring

We have been busy preparing our new garden:

This bed is 4' X 16'. We are using the "Double Dig" method. We are digging down and loosening 2 feet of soil. The loosening of the soil has raised the ground 6-8"

Pictured above, "Double Digging" in progress!

A local contractor was cutting trees nearby and he was more than happy to leave a truckload of waste in my yard! Half of the waste is wood chips, which we are using as ground cover (on top of cardboard I am taking out of cardboard dumpsters).

Owen and I built a pallet Compost Bin and it is quickly filling up! We will be building a couple more soon with free pallets I find being thrown away!

Spaghetti and meatballs for dinner!

The New World Encyclopedia of Cooking from the Culinary Arts Institute is such a great cookbook. I bought my copy from a Goodwill thrift shop for a couple bucks.

Tonight I followed their recipe for Spaghetti and Meatballs and it turned out to be the best spaghetti I've ever had.

This was also my first time making meatballs...and they turned out great! My kids loved them!

The Sauce cooked for 4 1/2 hours!

Homemade Meatballs rolled into balls..

Pan fried with garlic...

And Dinner is served! The spaghetti noodles are 100% whole wheat from Kroger, with cheese sprinkled on top.
